Byron Zarb, Chef & Owner

Chef Zarb first became interested in cooking as a boy helping his Maltese grandmother cook secret family recipes. Growing on the sunny, Mediterranean island of Malta, Byron developed his love of food by working in the kitchens of various local restaurants throughout his high school and college years. After college, Byron had decided that it was time to start working towards his passion of being a business owner in the hospitality industry.

That’s where Byron used his knowledge about the local event industry and established the brand Barcode Logistics. Byron has work with some of the largest events on the Island like MTV Music Festival, MFCC Events and many more. Whilst the brand was a great success, Byron still felt he need to started to work towards his true passion, COOKING!

Four years later, Byron established the company Fine Dine Malta. He accepted the challenge of becoming a restaurateur and opened his first restaurant, Paulu’s Dining in Bugibba, Malta.

In 2010, Paulu’s Dining’s success lead Byron to establishing Marina Club VW, with the passion of bringing delicious meaty dishes to the memorable location of the Valletta Waterfront. His valuable experience that allowed him to develop a deep understanding of the many ways in which ingredients pair with food. Simple dishes with rich flavors became his mantra as a chef.

Chef Zarb, who resides with his wife, daughter and two sons in Malta, is taking his eighteen years of experience with food and wine and offering it now in his own vision.
